Leftovers make the best meals. It is a great way of using whatever is sitting in the refrigerator and when you add or mix flavors it creates an entirely new dish.
In this video we will be making:
1. Creamy tomato lentil chicken soup
2. Marinated vegetable salad
3. Chicken fried rice
Recipe for marinated vegetable salad: Use hearty vegetables to marinate. I used Brussel sprouts, red peppers and zucchini.
For the marinade I used: 1/2 cup extra virgin olive oil 1/2 cup red wine vinegar 2 Tablespoons minced shallots 4 teaspoons Dijon mustard 2 teaspoons Italian seasoning 2 cloves garlic, pressed or minced salt and pepper
